2026 Spring Honey

Franktown, Ontario -  Small Batch - Triple filtered

My 2026 honey is the very first harvest of the season - gathered from my hives nestled in the lilac groves of Franktown, Ontario, beside a thriving marsh ecosystem. 

Spring in this region is fleeting and powerful. The bees forage across apple blossoms, dandelion, and lilac, creating a honey that is layered, delicate and beautifully complex. Where as much honey is "floral" tasting, my spring honey is more sweet and candy like. 

Living beside a marsh with no agriculture for miles, this honey is especially unique. Marshland nectar is prized for its mineral richness and botanical diversity.  Wetland environments support a wide variety of wild blooms resulting in honey that is light, nutrient dense and deeply reflective of the land. Many beekeepers consider marsh honey some of the most complex flavoured honey there is.
