This is my Beautiful Spring honey. It is early season, collected by the bees May-mid July, when the Goldenrod blooms and forever chages the honey taste until September.

In my area, I live near a marsh, with no agriculture for miles. There are hints of Apple blosson, Dandelion, Ground Strawberry, and many other delicate spring flowers, and traditionally I find this honey does not crystalize like the golden rod honey does.

This honey sells out VERY FAST, so usually after orders are fulfilled, the fall honey starts appearing. Once I’m out of spring, it’s a year before it’s available again. Therefore this honey is more expensive.
